Helmed by Chef May Chow of Little Bao, the recent reopening of Happy Paradise allows guests to experience a revamp of Chow's clever, updated twists on traditional Hong Kong favourites in an intimate and inviting setting. The short-rib dumplings are the perfect starter: juicy, meaty morsels wrapped in dumpling skins and bursting with freshness and flavour thanks to the urfa chilli dressing and generous lashings of coriander and spring onions. Meanwhile, the Szechuan fried chicken and sourdough waffles encapsulate Chef May's expertise in fusing western and eastern palettes. The fried chicken is perfectly crispy and tender with just the right amount of mala kick, whilst the sourdough waffles, moulded in the shape of HK-style egg waffles, pair wonderfully with the accompanying bottarga whip. Here, the bright freshness and umami of the bottarga and salmon roe lightens up the heavier dish and will have you mopping up every last fish egg with your sourdough eggettes.
